BBQ Spare ribs


3kg spareribs, trimmed

2 tablespoons salt

1 tablespoon, black pepper

2 cups water

1 onion, sliced

1 teaspoon garlic powder

Dash cayenne pepper

1 tablespoon paprika

Homemade barbecue sauce



Season ribs with salt and pepper

Brine ribs for 2 hours, place in the refrigerator

Remove the ribs from the refrigerator and rinse to remove excess salt

Season ribs with garlic powder, paprika, cayenne pepper and lay sliced onions around

Cook at 225 degrees for 2.5 – 3 hours or until tender, bone-side down 

Coat ribs with barbecue sauce and cook for a further 1 hour, bone-side up until the sauce begins to caramelise and stick to the meat.
