For the oats:
50g rolled oats per person
100ml milk or water per person
Pinch of salt
Pinch of cinnamon
Pinch of nutmeg
Put oats in a saucepan.
Pour in the milk or water.
Sprinkle in salt, cinnamon and nutmeg.
Bring to the boil.
Simmer for 5 minutes, stirring from time to time.
Make sure it doesn’t stick to the base of the saucepan. When ready, leave to stand for five minutes.
For the compote:
1 vanilla pod or 1 teaspoon vanilla extract
500g fresh of frozen berries
4 tablespoons honey
8 teaspoons lemon juice and zest (if you prefer a little more sweetness use less lemon juice and a few teaspoons of apple juice)
In a saucepan, on medium heat, combine the berries, vanilla extract, honey, lemon juice and zest. Allow to simmer for about 15 – 20minutes. Then set aside.
Serve oats with the warm berry compote.
