Ol’ Black-eyed peas Mexican-style. Black-eyed peas are widely eaten in African and American homes and are a great source of protein and fibre. This dish is easy to make and delicious to eat.
1 tin, Black-eyed peas
150g Sausages of your choice
1 medium onion, finely chopped
1 can, chopped Tomatoes
2 teaspoons, Sugar
2 teaspoons Garlic
Salt & Black Pepper to taste
Put the peas in a container with enough water to cover it. Leave overnight.
Fry the sausage until brown, stirring it constantly to allow it crumble.
Add onions and celery. Allow the sausages to cook while stirring constantly.
When cooked, drain the excess fat.
Drain the peas and put them in a clean pot. Cover with clean water and remaining ingredients.
Stir in the sausage mix and bring to boil.
Cover the pot, lower the heat and allow it to simmer until it’s well cooked.
Garnish with jalapeno peppers
