Hadassah Lamb Chops with flatbread

  • 6 lamb chops
  • 1 tablespoon harissa
  • 2 garlic cloves, minced
  • 1 small onion, chopped
  • 1/2 teaspoon, cumin
  • 1/2 teaspoon, paprika
  • Juice of 1 lemon
  • Salt and black pepper, to taste
  • 4 flat breads, store bought or homemade
  • 4 tablespoons ready made hummus
  • Handful of lettuce, chopped
  • 2 medium tomatoes, wedges
  • Pitted green olives (Optional)
  • Handful parsley



•Heat the grill to high

•Place the lamb on a baking tray, rub the harissa all over the lamb with garlic, onions, paprika, cumin, lemon juice salt and black pepper.

•Grill for 10 – 15 minutes or until cooked, turning half way through.

•When the lamb is cooked to your taste, put in a plate and allow to settle for a couple of minutes.

•Warm the flat breads in the grill

•Spread each with 1 tablespoon hummus.

•Slice the lamb and scatter down the middle of each flat breads roll up and eat with olive and parsley salad
