FRESH FRUIT SALAD WITH HONEY VANILLA YOGHURT

SERVES 4

This can be made the night before.

Ingredients:

½ teaspoon vanilla extract or paste

1 cup natural unsweetened yoghurt

½ tsp honey

65 ml fresh orange juice

30ml fresh lemon juice

¼ teaspoon grated orange zest

¼ teaspoon grated lemon zest

130g cubed fresh pineapple

135g strawberries, hulled and sliced

1-1/4 bananas, sliced

80g seedless grapes or berries, whichever you prefer

 

Method:

Combine the yogurt, honey, vanilla extract, and vanilla in a bowl and set aside.

Bring the juice and zest to a boil in a pan over medium high heat.

Reduce heat and simmer for a few minutes or until thickened.

Remove from heat, set aside to cool.

In a bowl, layer the fruit. Pour the cooled sauce over the fruit and ladle a spoon or two of the honey vanilla yoghurt on top.
