We know you can never get tired of fried plantain but switch it up a bit, will ya? Try Pastelon (Full name: Pastelón de Plátano Maduro), a dish similar to lasagna but with plantains.
3-4 large ripe plantains
1 chopped onion
1 red/green bell pepper or both
3 teaspoons of minced garlic
1 tsp of cumin spice
1 tsp of smoked paprika
1 tsp of thyme
1 tsp of cayenne pepper
2 tomatoes or tomato sauce
1 pound of ground beef/chicken
¼ cups of sliced olives
2 stems of green onions
1/4 tsp of ground coriander
Salt to taste
1 tsp of ground black pepper
Peel the plantains. Slice lengthwise into thin pieces.
Fry until they are golden or bake them, your choice.
Place the fried plantains on paper towels to absorb the excess oil.
Heat 2 tablespoons of oil in a saucepan, add the onions, garlic, cumin, smoked paprika, cayenne, oregano and saute for a few minutes.
Then add the bell pepper and tomato sauce. Bring to a simmer.
Add ground meat and cook for about 7-10 minutes. Keep stirring to prevent burning and add water as needed.
Season as preferred.
Add the olives, parsley, and scallions. Let it cook for a few minutes and take the saucepan off the heat.
Grease a deep pan with butter or oil.
Place the plantain strips side by side leaving no space.
Add the beef mixture, the cheese, and the plantain strips until you have several layers.
Whisk the eggs and pour on top of the layers.
Bake for about 30 minutes at 350 degrees.
Let it cool, then serve.
